How to get there: use the ✨ Suggest schedule button — it builds a week around the 6:30/6:45 openers, double closer coverage, and only adds mid-shifts on days where projected sales justify them. It typically lands around $3,300–3,400/wk (≈34%). Don't cut all at once: step down $4,300 → $3,800 → $3,400 over a month as the new hires get faster, and let Saturday/Sunday keep extra help — they're your money days ($2,200/$1,900).
Openers: the 6:30 + 6:45 stagger is enforced here — the board flags any day missing either opener. Only put 4★+ dependability people on the 6:30 slot; a no-show opener is the most expensive mistake a coffee shop can make.
Rush coverage: your rushes are 8–11am (every real sales day) and 2–4pm on the busy days — Thu/Fri/Sat/Sun. The suggested schedules staff for it: a third person 8am–12pm on any $1,000+ day, and on Thu–Sun a 1:30–5:30 swing plus both closers in by 2pm, so you have 3 on the floor through the afternoon rush. Nia is on the lead track — she's a natural anchor for the Fri/Sat rush blocks while she's being groomed.
Scaling to $3K/day Thu–Sat: the scheduler staffs to whatever sales number is in the day's cell — so to plan a growth week, type 3000 into Thu/Fri/Sat on the Insights tab and hit ✨ Suggest. Tiers kick in automatically: $1,800+ adds a 10–4 mid, and $2,500+ goes 4-deep at both rushes plus a 4:30–close beer-evening shift. A $3K day builds to ~54 staffed hours ≈ $800 labor — that's 27% of sales, healthier than today's 41% at half the volume. Growth fixes labor %; understaffing your busy days breaks it. The bottleneck to watch is people, not dollars: 4-deep Thu–Sat needs your full TABC'd closing crew healthy and ~250 hrs/wk total, so keep Brittany cross-trained and consider one more evening hire before the holidays.
New hires: Brianna M. and Brittany K. are flagged NEW — but note their short August shifts were training blocks, not their real lanes. Brianna M. picked up fast and already handles 6:30 Saturday opens; Brittany's availability is actually wide open. Brianna Griffin is promoted to trusted opener (6:30/6:45 approved). The board still warns if a day's coverage is new-hires-only.
Opener/closer depth (the resilience math): every day needs 2 openers (6:30 veteran + 6:45) and 2 closers (staggered starts, both to close+30) — that's 14 opener slots and 14 closer slots a week. To fill those without burnout or a single point of failure you want at least 4 people cleared for 6:30 opens (today: Jordan, Kwame, Nia, Brianna G Mon–Wed + Magana as 6:45) and at least 4–5 cleared for Thu–Sat late closes (today: Claudia, Joana, Reese, Sydney, Everth, Brittany). Jordan/Kwame/Nia availability ends ~5pm, so they can never close Thu–Sat — keep them on mornings.

Overtime: anyone crossing 40 hrs/week turns red and the weekly total adds the 1.5× premium — at $15/hr, OT hours cost $22.50, which quietly wrecks a $600 day.
Sales data: Aug 1–20 daily net sales are loaded from Square (green badge = actual). Fri 8/21 onward uses projections from your day-of-week averages (amber badge). From beer launch on, Thu–Sun carry a modest uplift: Mon ~$830, Tue ~$950, Wed ~$1,250, Thu ~$1,400, Fri ~$1,550, Sat ~$2,450, Sun ~$2,050 ≈ $10,100/wk. That uplift is an assumption — overwrite cells as real weeks land, and ask Claude to re-sync next month.
🍺 Beer / TABC (license lands Thu 8/27): that's why Thu–Sat run to 9pm. Before launch: get every closer TABC seller-server certified — it's a ~2-hour online course, roughly $11–15/person, and it gives you Texas safe-harbor protection if someone serves a minor. Mark each certified person with the 🍺 TABC pill on their card; from 8/27 the board flags any day (or stretch of day) with no certified person on the floor, and the auto-scheduler favors certified staff for closes. Priority order: Claudia, Joana, Reese, Sydney, Everth, Brittany (the late-close crew), then the openers. Also check ID-scan settings in Square and post your TABC signs before the first pour.
